Bihari Style Sattu Paratha Recipe
Sattu Paratha is a popular delicious and nutritious stuffed flatbread in Bihar. It’s made with a filling of roasted gram flour (sattu) mixed with spices and herbs. Here’s a step-by-step recipe to make authentic Bihari Sattu Paratha.
Ingredients:
For the Dough:
- 2 cups whole wheat flour
- Water, as needed
- 1/2 teaspoon salt
- 1 tablespoon oil
For the Filling:
- 1 cup sattu (roasted gram flour)
- 2–3 green chilies, finely chopped
- 1 small onion, finely chopped
- 2 tablespoons fresh coriander leaves, finely chopped
- 1 teaspoon ajwain (carom seeds)
- 1 teaspoon kalonji (nigella seeds)
- 1/2 teaspoon mustard oil
- 1 tablespoon lemon juice
- 1 teaspoon grated ginger
- Salt, to taste
- Water, as needed
For Cooking:
- Ghee or oil, for frying
Instructions:
Prepare the Dough:
- In a mixing bowl, combine the whole wheat flour and salt. Add water gradually and knead into a soft and smooth dough.
- Add 1 tablespoon of oil and knead again. Cover the dough with a damp cloth and let it rest for about 20–30 minutes.
Prepare the Filling:
- In a separate bowl, combine the sattu, green chilies, onion, coriander leaves, ajwain, kalonji, mustard oil, lemon juice, grated ginger, and salt.
- Mix well. Add a little water, a spoonful at a time, until the mixture is moist enough to hold together but not too wet.
Assemble the Parathas:
- Divide the dough into equal-sized balls (about the size of a golf ball).
- Roll each ball into a small circle (about 4 inches in diameter) on a floured surface.
- Place 2–3 tablespoons of the sattu filling in the center of the rolled-out dough.
- Gather the edges of the dough to enclose the filling and pinch them together to seal.
- Flatten the filled dough ball gently and roll it out again into a larger circle (about 6–7 inches in diameter), being careful not to let the filling spill out.
Cook the Parathas:
- Heat a tawa or griddle over medium heat.
- Place the rolled-out paratha on the hot tawa. Cook for about 1–2 minutes until brown spots appear on the bottom.
- Flip the paratha and drizzle a little ghee or oil around the edges. Cook for another 1–2 minutes until both sides are golden brown and crisp.
- Repeat the process with the remaining dough and filling.
Serve:
- Serve hot Sattu Parathas with yogurt, pickle, or any chutney of your choice.
