Sattu Paratha is a popular delicious and nutritious stuffed flatbread in Bihar. It’s made with a filling of roasted gram flour (sattu) mixed with spices and herbs. Here’s a step-by-step recipe to make authentic Bihari Sattu Paratha.

Ingredients:

For the Dough:

  • 2 cups whole wheat flour
  • Water, as needed
  • 1/2 teaspoon salt
  • 1 tablespoon oil

For the Filling:

  • 1 cup sattu (roasted gram flour)
  • 2–3 green chilies, finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon kalonji (nigella seeds)
  • 1/2 teaspoon mustard oil
  • 1 tablespoon lemon juice
  • 1 teaspoon grated ginger
  • Salt, to taste
  • Water, as needed

For Cooking:

  • Ghee or oil, for frying

Instructions:

Prepare the Dough:

  1. In a mixing bowl, combine the whole wheat flour and salt. Add water gradually and knead into a soft and smooth dough.
  2. Add 1 tablespoon of oil and knead again. Cover the dough with a damp cloth and let it rest for about 20–30 minutes.

Prepare the Filling:

  1. In a separate bowl, combine the sattu, green chilies, onion, coriander leaves, ajwain, kalonji, mustard oil, lemon juice, grated ginger, and salt.
  2. Mix well. Add a little water, a spoonful at a time, until the mixture is moist enough to hold together but not too wet.

Assemble the Parathas:

  1. Divide the dough into equal-sized balls (about the size of a golf ball).
  2. Roll each ball into a small circle (about 4 inches in diameter) on a floured surface.
  3. Place 2–3 tablespoons of the sattu filling in the center of the rolled-out dough.
  4. Gather the edges of the dough to enclose the filling and pinch them together to seal.
  5. Flatten the filled dough ball gently and roll it out again into a larger circle (about 6–7 inches in diameter), being careful not to let the filling spill out.

Cook the Parathas:

  1. Heat a tawa or griddle over medium heat.
  2. Place the rolled-out paratha on the hot tawa. Cook for about 1–2 minutes until brown spots appear on the bottom.
  3. Flip the paratha and drizzle a little ghee or oil around the edges. Cook for another 1–2 minutes until both sides are golden brown and crisp.
  4. Repeat the process with the remaining dough and filling.

Serve:

  1. Serve hot Sattu Parathas with yogurt, pickle, or any chutney of your choice.
